I have had the pleasure of being Mary’s friend and experiencing her amazing cooking for over ten years. This past year, she prepared a specialty dish from Utica, NY “Chicken Riggies” for a holiday dinner. I was elated because this is my favorite Italian dish. A few restaurants around Albany attempt the recipe but tend to overdue it. Mary nailed it on her first try. My dad was a chef and owned his own Italian restaurant in Utica. Needless to say, I am a food snob. Mary reminds me of my dad, she shops local farmer’s markets and co-ops for the best ingredients and foods possible. It is truly difficult to find the quality and preparation of cooking that Mary provides in most restaurants in the Capitol district.
